Ahlin’s Thai Spicy Sauce

Aunty’s friend Ahlin is a terrific cook.  Sometimes she makes Thai green curry, Pad Thai, green papaya salad, unreal pork chops, etc.  All unreal delicious.  What makes it all even better is that she shows Aunty how to cook, several times.

Since Aunty is a slow learner in the kitchen (actually, Aunty is a take out queen of the highest degree), a video was made, and Joe Young at the Apple Store taught Aunty how to edit it with iMovie on her iPhone.  Mahalo to Ahlin and Joe – after you make this sauce for yourself, you will be SO happy, especially your happy mouth and taste buds!

Ahlin’s Thai Spicy Sauce

About 3 or 4 cloves of garlic, minced
1 or 2 fresh Hawaiian chilis, minced
3 TBS rice vinegar
5 TBS fish sauce
1 TBS brown sugar
fresh lemon, to taste

Mince garlic and chilis, add to a dish or bowl.
Combine rice vinegar, fish sauce, and brown sugar in a small sauce pot.
Heat up the mixture (do not boil) until the sugar is dissolved.  Taste and adjust.
Add the hot liquid mixture into the bowl with the garlic/chili.  Stir.
Add lemon juice to taste.

This sauce is amazing over noodles, fried rice, meats, fish, etc.

Store in an airtight jar in the refrigerator, and enjoy, enjoy, enjoy!

    • Thanks Kathy! I’ll do one on pork chops – just for you – but Ahlin has left the islands for awhile. I do have some pictures that I took of the steps so maybe I can do a slide show, or I will wait until she returns.

  4. Wow! She knows how to make pad Thai. That’s fabulous! It’s my favorite Thai dish. I really need to get over to the Genius Bar and get some lessons. Too lazy.

    • She knows how to make everything. A true treasure of a friend. We would go to different Thai restaurants to eat – and she would be quite critical of some of their dishes. The best we went to was Thai Valley Cuisine in Hawaii Kai (close to Sandy Beach in the residential section next to the golf course). Carol’s (the owner) Pad Thai was light, simple, and perfect, imo. Her fried fish was a delightful surprise since it arrived soup-like, but BAM! delicious! A bit expensive since I am used to fast food prices, but a nice splurge for the senses.
      You really do need to get over to the Apple Store. Not the Genius Bar – that’s for tech support issues. Go to Apple.com/kahala (or whatever store you want to go to) and scroll down to the calendar of workshops. When you find one that you like (i.e. iPhone basics, iPhone videography, Apple ID and iCloud, etc.) at the time and day you like, “reserve” it. Sometimes there are 6 people in the class, sometimes only 1 or 2, and most of the instructors are very good, and very patient. And, it is all for free!
      Apple astounds me. Not just the products, but the support. Totally awesome and I am happy.
